Keto Pecan Biscotti
I finally did some Keto baking! I’ve been wanting to get back into baking for months now and I’ve either been too lazy or simply couldn’t find the ingredients for the low-carb treats I wanted to make. Honestly, the ingredients are stupid expensive. Flour and sugar are cheap - almond flour and monk fruit sweetener are NOT. Then you have to track down things like xantham gum or sugar-free chocolate, and honestly, it’s not the easiest. I can’t find sugar-free white chocolate chips in the grocery store to save my life!
Regardless of the price, I’m so happy to have finally finished my first Keto baking project! These toasted pecan biscotti were absolutely delightful. Mr. San Diego loved them too! They didn’t taste “low-carb” at all and I doubt anyone would notice that they weren’t made from regular sugar and flour! According to the recipe, each slice should be around 3-4g net carbs.
I found the recipe for these on the All Day I Dream About Food blog and made some minor tweaks. I couldn’t find sugar-free cranberries (I’ll just have to dehydrate my own if I try again), and I had to use coconut oil instead of cocoa butter with the chocolate, which I wouldn’t recommend since the chocolate didn’t completely set. Even after a few hours, the chocolate was still sticky. Additionally, instead of regular granulated Swerve sweetener, I used the brown-sugar Swerve sweetener.

I have to apologize for the super lame quality of this image. Normally I use my actual camera to take photos of my baking projects, but several shots into me shooting them, my camera went completely haywire! Turns out, my memory card was completely done for and I lost all the images I had taken! At least the issue wasn’t with my camera like I had originally assumed! By the time I figured out the problem, Mr. San Diego ate a few of the biscotti and I had to rush to capture at least one decent image with my phone. Haha!
Now that I’m back in the kitchen and baking again, I can’t wait to try out more. With it almost being Christmas, I think I’ll try to make something fun with my nieces that is both delicious and festive! Stay tuned!
