Lemon Blueberry Mini Bundt Cakes

When I die, I hope to be reborn as a lemon. They’re just like me - sour and sometimes sweet (but not always).

I have been obsessed with lemons for as long as I can remember. For my seventh birthday, I didn’t ask for toys or dolls or any of the typical things that a young child asks for. Nope - I asked for a lemon tree to fulfill my dream of twenty-four-seven access to lemons whenever I wished. It was a pure tragedy that my beloved lemon tree never once blossomed (seriously, not a single lemon ever) and therefore crushed my dreams forever. You better believe that I will re-visit this lemon tree dream whenever Mr. San Diego and I decide we’re responsible enough to live somewhere with a yard.

My lemon obsession is part of the reason why I am IN LOVE with these mini bundt cakes. The other part of why I love them is that I’m obsessed with blueberries. Combining two of my favorite fruits, adding butter and sugar, and then glazing them with a lemon simple syrup? C’MON! Tell me that doesn’t sound AMAZING?! Just look at them! Aren’t they gorgeous?! Don’t you just want to shove them all into your mouth and then have an internal debate as to whether you should have saved some for your partner or not?



The recipe for these beauties come from A Pretty Life in the Suburbs. I did everything the recipe called for, but I added a cup of blueberries and baked them into mini bundt cakes. I’ve already made these twice and they’ve been devoured with reckless abandon each time. They make your house smell amazing while baking and it’s really hard to stay away from them once they’re done.

As you can tell, I slightly overfilled the moulds and the mixture ended up covering the ends of the bundt holes (haha, bundt holes), but I didn’t mind. It actually ended up soaking up the simple syrup that spilled over the sides! I might purposely overfill them in the future because it worked out well.
