Spring Honey Cupcakes
Spring! I have a love/hate relationship with this season. On the upside, the weather is usually pleasant, the beautiful flowers start to bloom, and it means that BASEBALL is here! On the downside, the blooming flowers murder my allergies, the insane storms start to roll back in to Texas, and the large bugs make their return.
Last week, my constant need for my inhaler (pollen…pollen everywhere) made me feel quite cynical about the season - that was until I went to Joann’s and was surrounded by all things Spring. I couldn’t help but feel excited by all the flowery decorations. I found these adorable flower petal cupcake liners by Wilton and immediately felt inspired to bake something to celebrate the season!
It only felt right to bake honey cupcakes into these super cute cupcake liners because no one loves flowers more than bees do! One of my favorite things ever is honey, and therefore, I have a lot of love and respect for bees. I decided to make the effort to hand make chocolate bees to add on top! Admittedly, they look a little sloppy, but I give myself an ‘A’ for effort.
I am completely in love with how these turned out! Not only do they look adorable but they taste INCREDIBLE too! Mr. San Diego said that the flavor reminded him a lot of cornbread. They aren’t too sweet and have just enough honey to really make the flavor stand out. I found the recipe for these Honey Cupcakes with Honey Cream Cheese frosting at The Cake Blog!
Making the little chocolate bees was a lot harder than I thought it would be. Working with melted chocolate on such a small scale required patience and a steady hand. Instead of using a piping bag for the stripes, I thought it would be easier and quicker to use a tooth pick and quickly drag melted chocolate across the body in lines. It sort of worked but it was REALLY sloppy and inconsistent. Lesson learned. At least they’re passable as bees and the overall end product was absolutely delicious!
