Ice Cream Cone Cupcakes
What do you get when you cross an ice cream cone with cake batter? A messy kid, that’s what! While the idea for cupcakes inside an ice cream cone has been around for ages, this is the first time Princess Buttercup and Princess Vanellope got to see and make these. They were thrilled when they found out what they would be baking!
Under normal circumstances, I try to avoid using anything pre-made or boxed for my baking blogs. However, I decided to make an exception for this baking adventure and used boxed cake mix and pre-made frosting to make it quick and easy. It has been ages since I’ve had boxed funfetti cake and I forgot how yummy it is! The girls had such a great time making these and had an even better time eating them!
We used a popover pan to bake the cupcakes and it was PERFECT for securely holding the ice cream cones while they baked. You could also use a regular cupcake pan since popover pans aren’t a common household staple. Once our cake batter was ready, we filled the cones to the top of the “handle” and baked them for about 28 minutes at 350 degrees. It was a torturous 28 minutes for my nieces and they were aghast at having to wait even longer to let them cool before frosting them.
When the cupcake cones were finallllllllllly cooled enough, the chaos of frosting them and adding sprinkles ensued. We found sprinkles everywhere! On the floor, in their hair, in between toes. It was a miracle that some actually ended up on top of the frosting. The girls were SO PROUD of their creation. While we knew the kids would love them, we were pleasantly surprised to find that all the adults loved them too!
Spending time with these beautiful girls in the kitchen was a blast. They are always so enthusiastic to learn and get hands on experience. It fills my heart with so much joy that we have this awesome experience to bond over. They are now filled with ideas for what to do next (most of them crazy) and I can’t wait to get back in the kitchen with them!
