Keto Raspberry Bliss Bars
I’ve been sitting on this recipe for weeks now and the only thing that was keeping me from making it was the fact that I could not find sugar-free white chocolate chips for the life of me. Seriously, I was convinced they did not exist. It wasn’t until a random trip to Walmart that Mr. San Diego finally found some by Bake Believe!
The recipe for these Keto Bliss Bars is on the All Day I Dream About Food blog! She uses dried cranberries and these are meant to be a Keto version of the bars you find at Starbucks. Well, traditional dried cranberries are loaded with sugar and I didn’t want to make the effort to dehydrate my own…so I used freeze-dried raspberries to get that red pop of color!
These actually turned out great! One of the issues with Keto baking is that almond flour burns easily and crumbles even easier. It’s been interesting learning how to bake with it and I’m glad that these didn’t completely disintegrate like some of my other Keto baking attempts. They tasted delicious but they definitely stuck to the bottom of the baking dish and were a pain in the bum to take out. If you decide to try it for yourself, it might be wise to line your baking dish with parchment paper.
These bars are super tasty and I definitely think I’ll be making these again in the future!
