Happy Pi π Day | Keto Butter Pie
Happy March 14th, or as the dessert loving math nerds around the world call it - Pi Day! If you’ve been living under a rock, 3/14 is celebrated with pie because 3.14 is the start of the mathematical constant π, otherwise known as “pi”. This play on words is fun AND delicious!
To celebrate, I decided to make a Keto Friendly Butter Pie! Well..if I’m being honest, I made a butter cake in a pie dish with a custard filling. Butter cake is a popular Southern treat and butter pie is a savory English dish with onions and potatoes. However, I do what I want and I thought this Southern delight would be a fantastic pie. Based on how it tasted and looked, I think I’m right! Mr. San Diego said it was so good, no one would ever guess it was low-carb! It was creamy, delicious, and didn’t fall apart!
This recipe comes from the All Day I Dream About Food blog and I only made a few tweaks from her recipe. Instead of using whey powder, I used 1/2 tbs. of Xanthan and 1 tbs. of Coconut Flour. It was honestly really, really tasty and super easy to make! Plus, I already had most of the ingredients on hand. If you decide to try it out, let me know how it goes! Happy Pi Day, everyone!!
