Keto Sour Cream Vanilla Cupcakes
Who doesn’t love a good cupcake? Honestly, I could generally do without the frosting but I was feeling inspired to make something fancy this weekend! I haven’t done a Keto bake in a while and I missed being in the kitchen. My two favorite kinds of cupcakes are yellow box cake cupcakes and strawberry cupcakes, which might seem boring to some but I’m a boring gal and I love it! These cupcakes taste a lot like yellow box cake with an almost cornbread like texture. Baking with almond flour means that I can never get that beautiful and fluffy texture that you would normally get with flour but it doesn’t make them any less delicious.
I found a great and easy recipe on the Joy Filled Eats blog and they turned out great! I loved the flavor and I just threw together a really simple cream cheese frosting with Swerve Confectioner’s Sugar to add to the top. The only part that wasn’t Keto are the gold sprinkles but they’re really just for decoration and I didn’t eat them.
