Thoughts: My very first creation from the Super Simple book was AMAZING! I made the Lemon Pesto from scratch, which was absolutely incredible, and I even toasted some fancy prosciutto. Not only that, I also discovered the glory of manchego cheese! WHAT A HIT! I’m excited to add the Lemon Pesto to my regular sauce rotation, and I know this dish will be a great one to make whenever I have company over and need something easy to make.
