Thoughts: In the notes of this recipe, Tieghan states that using a pressure cooker is her favorite method of cooking this chicken, but she also provides instructions for oven roasting and crockpots. I chose to oven roast the chicken since I wanted really crispy skin, and honestly, it worked out great! The chicken was sooo juicy and the skin was crispy. I know it looks a bit dry in the picture, but I promise the inside was perfect. I plan to use the leftovers for the pot pie recipe tomorrow!
