Thoughts: These lettuce wraps are super light and are super easy to make on a hot summer day! The peanut sauce is nice, but it’s not as flavorful as I wished. My husband loved it, so I think it’s just a preference thing. I love curry, so I’ll probably double up the curry paste the next time I make them. I might also choose a different, thicker rice noodle. Nothing wrong with the vermicelli, but the texture of the lettuce with the texture of vermicelli was just too soft for me. Overall, it was a nice and lightweight lunch option, and required little effort on my part, which is always a win!
