Thoughts: After a small break (two vacations and lots of distractions), I’m back in the kitchen with a not-so-simple recipe! This pizza was a doozy because there were three steps. First, I made the No-Knead Bread / Pizza Dough on Page 20, in which I used Lone Star Beer and it obviously took a few hours to rise. Then, I made the Lemon Basil Pesto on Page 19, which I’ve made a few times now and absolutely love. Lastly, I had to assemble the pizza, and boy-oh-boy was the dough difficult to spread. I know there is an art-form to it, but I possess none of those skills. After a while, I managed to get the dough spread out just enough to add my toppings, but it definitely was NOT round. After I baked the pizza and took my first bite, I forgot all about the giant mess I made in the kitchen because the pizza was SO INCREDIBLY DELICIOUS! It was packed with flavor and felt almost healthy in a way. It was worth all the work, but I’ll need to better prepare next time.
