Thoughts: Honestly, the idea of making my own pancake mix had always seemed pointless since boxed mix is so cheap and easy to make. If it wasn’t for the fact that I’m determined to make EVERY recipe in this book, I might have overlooked this one. I’m glad I didn’t! Now I know how easy it is to make my own mix, and I made enough to store and keep on hand.
Note: The recipe is very unclear on what else to add to make the mix ready to book. I vaguely followed the pumpkin pancake recipe in the book to get to a texture I wanted, and believe I mainly used one egg and enough water to get it liquid enough to pour.
Score: 6 out of 10, only because there aren’t clear follow-through instructions.
